How to Turn Leftovers Into Easy, Nutritious New Meals

With grocery costs rising, turning leftovers into new meals can help stretch the food budget, reduce waste and save cooking time. UCI Health executive chef Jessica VanRoo recommends using leftover grains, proteins and vegetables as flexible building blocks for nutritious meals. The following recipes make good use of ingredients already in the refrigerator:
Grain & Egg Muffins with Spinach, Feta and Sun-Dried Tomato: Combine leftover whole grains such as quinoa, brown rice, farro or barley with eggs, spinach, feta and sun-dried tomatoes for a protein- and fiber-rich breakfast. They can be prepared ahead and kept in the refrigerator for convenient breakfasts throughout the week.
Fried Rice-Style Grains with Chicken: Give cold, day-old grains and leftover chicken or other proteins a fresh start by stir-frying them with eggs and whatever vegetables are available. Chilled grains work especially well for a crisp texture and may also provide resistant starch that supports gut health. The recipe can easily be adapted with turkey, shrimp, tofu or edamame.
