From Pancakes to Salmon: Delicious Recipes for Aging Gracefully

Healthy aging starts with superfoods — nutrient-packed, minimally processed foods that fuel brain, bone, and heart health. UCI Health dietitian Katie Rankell says incorporating them into daily meals supports long-term wellness and helps fight disease naturally.
Top Superfoods:
Leafy greens • Berries • Mushrooms • Avocados • Tomatoes • Nuts & seeds • Fatty fish • Eggs • Greek yogurt
Recipe Highlights:
🫐 Lemon Ricotta Pancakes – Antioxidant-rich blueberries, vitamin C from lemon, and protein from ricotta, oats, and chia support energy, skin, and bone health.
🐟 Pan-Seared Salmon with Apple Cider Glaze – Omega-3s protect the heart and brain, while apple cider vinegar aids digestion and olive oil adds anti-inflammatory benefits.
🍎 Apple, Celery & Pecan Salad – Crisp and colorful mix full of fiber, antioxidants, and minerals that boost gut, liver, and immune health.
