4 Easy, Kid-Friendly Recipes That Help Children Enjoy More Vegetables

Feeding vegetables to picky kids doesn’t have to be a struggle. Experts recommend repeated exposure—whether through growing, shopping for, or cooking with veggies—as a way to increase acceptance. Start with small portions and involve kids in food prep to build interest and familiarity. UCI Health experts and chefs share four family-friendly, nutritious recipes that help sneak in or highlight vegetables:
Cheesy Egg and Veggie Breakfast Quesadilla – Kids help prep this protein-packed breakfast with eggs, cheese, and sautéed veggies.
Veggie Chicken Nuggets – Carrots and cauliflower, broccoli, or zucchini are hidden inside baked nuggets for a vitamin-rich twist on a kid favorite.
Sweet Potato Fries with Maple Ketchup – Baked for crispness, these fries are rich in fiber and paired with a homemade ketchup sweetened with maple syrup.
Veggie Stir-Fry with Rice – This colorful dish combines fresh, crunchy vegetables with optional chicken, steak, or tofu and a flavorful sauce, served over rice.

Owl’s Clover: A Vibrant Native Wildflower Vital to Pollinators and Endangered Butterflies

Owl’s Clover is a striking pink-purple wildflower native to Southern California that brightens grasslands each spring and attracts pollinators like bees and butterflies. Uniquely hemiparasitic, it draws nutrients from nearby plant roots while still photosynthesizing, allowing it to thrive in varied environments. It also plays an essential role in the ecosystem as a host plant for the endangered Bay checkerspot butterfly.
